Eating Clean: Pancake Breakfast. That’s Right…. Pancakes

Pancakes, Griddle Cakes, Hot Cakes or my personal favorite: Flapjacks. Whatever you want to call the quick-bread favorite, the easy-bake best pal of the butter & syrup combo has been a breakfast staple since pre-historia. True story. But this is HDIGF and in this recipe, we’re giving the straight-arm to all the butter and syrup and serving up some pancake action that may very well be the best “from scratch” recipe you’ve had. No joke. Our recipe was even included in a recent regionally hot-selling cookbook (incidentally NOT filled with eating clean recipes). And BONUS: this recipe makes about 16-18 pancakes– and at three pancakes per serving, that’s six total servings for an easy, grab-it-on-the-go P90X “OK” breakfast adventure almost every day of the week.

What You Need:

Mixing bowl, mixing spoon, griddle/pan and a flapjack-flippin’ spatula of your choice.

1 1/2 c. Whole Wheat Flour

1 tbsp. Baking Powder

1/2 tsp. Salt

2 tbsp. Brown Sugar (I know, I know… but split 6 servings, it’s nothin’)

2 Egg Yolks

1 1/2 c. Skim Milk (nut milks–almond, coconut– can do here as well)

3 tbsp. Unsweetened All Natural Apple Sauce

2 Egg Whites (beat until frothy)

BONUS: If you’re feeling a little crazy, toss in some cinnamon or vanilla. Or whey protein, even. You can also chop up some apples and mix them in. I like it. My family, on the other hand… not so much.

Five Minute (Or Less) Prep

Turn on your griddle or stove top. In your mixing bowl, add all ingredients in order until you get to the eggs. Seperate the yolks into the mixing bowl and the whites into a separate container. Beat the egg whites with a fork/whisk until frothy/bubbly and set aside. Continue adding ingredients in order, topping off your mixing bowl with those egg whites you just punished. Mix well.

Using a 1/4 cup as measurement and ladle, pour as many individual pancakes onto your griddle/pan as will fit. Flip the pancakes when the upward facing surface begins to have a few bubbles in it. Once cooked to desired consistency, remove from the griddle/pan to a plate and repeat until all the batter is gone.

Eat up topped with Greek yogurt or a half serving of strawberries. Personally, I like the pancakes plain as there’s a “hint of sweet” to them. I’ll also eat these with  six eggs (4 egg whites and 2 whole eggs) or a serving of Whey Protein and call breakfast “done”.

The (Macronutrient) Breakdown

This is a carb after all so be careful with it and wedge it into your portion plan as appropriate. Again, the serving size is 3 pancakes and it breaks down like this:

Calories (3 Pancakes): 156

  • Fat: 3 g
  • Carbs: 27 g
  • Protein: 9 g
  • Fiber: 3 g

    Awesome pancakes! I had them with three eggs and half an avocado, great meal! I’m still trying to work up enough courage to try and make the vegan burrito, looks good. Thanks for all the great ideas!
