Eating Clean: Kickin’ Honey Citrus Salmon

Salmon. I love it.

This cold-water fish is the fatty, juicy indulgent delicacy that you don’t have to feel guilty about. You have a few choices when you go for salmon- farm raised or wild caught. Farm raised tend to be fattier and softer and, well, “farmed”, while wild tends to be a little more firm and can be a little more “dry” and “natural”. You can do your own investigation into which route you’d like to go but we’ve vetted our salmon purchasing and come out on the side of organically farm raised for now because I’m paranoid (warranted or not)  about Pacific salmon and a nuclear reactor leak called Fukishima.

I know.

Anyway, my anxiety aside, there’s more than a few great ways to prep your Salmon. Here’s one:

What You Need:

Kickin-Citrus-Salmon-ingredients

Small mixing bowl, whisker for whisking ingredients in said mixing bowl,  pan (glass pan or cookie sheet covered in foil) for baking/broiling. If you’re the outdoor cooking type, you know you have other options… time to fire up that grill.

¼ c. 100% Orange Juice

2 tbsp. Fresh Lemon Juice

1 tbsp. Raw Honey (or Grade B Maple Syrup for an earthier hint of maple)

2 tsp. Chili Powder

1 tsp. Ground Cumin

½ tsp. Sea/Himalayan Salt

Raw salmon fillet, about 1-inch thick (a serving size is 4-6 oz based on your macros)

BONUS: 1 Dash Cayenne Pepper (if you like it spicy)

Five Minute (Or Less) Prep

You have two choices here- you can marinate your salmon for an hour or just throw it on the grill. your choice.

I AIN’T GOT TIME FOR NO MARINADE PREP: Time to get on it! Turn your oven or grill on for preheating action. We usually go 400-ish on the oven. Dump your measurements of orange juice, lemon juice, honey, chili powder, cumin, salt and (BONUS) cayenne into your small mixing bowl. Open your salmon and place it on the foiled cookie sheet/glass pan and douse that sucker with your marinade. Put that salmon in the oven and bake for 20 minutes or until fish is flaky and pink. Dunzo.

MARINADES NEED TIME AND I’VE GOT SOME INSTRUCTIONS: The patient type, huh? Good for you. Dump your measurements of orange juice, lemon juice, honey, chili powder, cumin, salt and (BONUS) cayenne into your small mixing bowl and mix until smooth. Open your salmon and place it in a glass baking pan. Pour the marinade over that action and refrigerate for an hour or more. Once you’re ready, turn your oven or grill on for preheating action. We usually go 400-ish on the oven. Put that salmon in the oven and bake for 20 minutes or until fish is flaky and pink. Fin.

The (Macronutrient) Breakdown

Salmon is fat-tastic in all the right ways. That said, it is obviously “fat dense” so be sure to weigh it in with your macros for the day. Again, the serving size is 4-6 oz. if you’re using a whole flank. If you’re using indivudal servings, they should be pre-measured at about 4 oz. Calorie Breakdown?

  • Carbs: 7 g
  • Protein: 25 g
