Eating Clean: Tuna Apple Salad w/ Almonds
When it comes to nutrition and making sure the food you’re taking in is nice and “clean”, you have boatloads of recipe options. Still, not all of them are quick and/or easy. While nutrition guides line up some AWESOME meals… let’s be honest, some recipes (as delicious as they are) can be time-intensive, require lots of minced/chopped/lovingly handled ingredients– which is cool if you’re not up against the clock at 7 in the morning or missing a personal chef.
Being a Dude who packs lunch/snacks on the go every morning for my day of macro-nutrient fueled, every 2-3 hour eating schedule, I prefer fast and easy. Saturday and Sunday can wait for the breakfast souffle for breakfast or a gourmet wrap with a zesty chipotle yogurt dressing for lunch. And while meal replacement shakes and protein bars can do in a crunch, whole foods are better at keeping you fuller, longer.
All that said, here’s a quickie lunch/snack I like to throw together. It’s nothing much but hey- it’s fast, easy and pretty tasty if tuna is your thing.
What You Need
(1) Medium Apple (I’m a fan of crisp and sweet Fuji– Granny Smith have a bit less sugar)
1 can Albacore Tuna (Or two, I guess, if you’re after a ridiculous protein rush)
1 Tbsp Olive Oil Mayo
(10) Whole (Or chopped if you have time) Almonds
If you’re Feeling Fancy and have time to chop:
1/4 cup Celery
1/8 cup Red Onions
Mind-Bogglingly Easy Prep:
Open tuna can. Dump in a seal-able bowl/Tupperware container. Cut apple into diced, bite-sized pieces. Dump into same bowl as tuna. Add Mayo and Almonds. Mix and DONE. Eat plain or with a serving of greens.
